Today’s menu takes us to South Africa where I’ll be cooking up the classic dish Bobotie, an Indonesian inspired beef dish that was brought to South Africa with the Dutch colonists, many who came from Indonesia. This dish reminds me of the Greek dish Moussaka because it has that creamy custard topping that sits on top of ground beef flavored with curry, ginger, apples and savory herbs. It is indeed an unusual mixture, but definitely one that will transport you to another continent and who isn’t itching to travel a bit these days? The Bobotie will be paired with a yellow couscous and a green salad. This meal does include gluten and dairy; although I am happy to cook up some without either if you put your choice in the comment.
